Vegan Peanut Butter Brownies

Ingredients
Step 1
1/4 cup Rolled Oats
1/2 cup Almond Flour
1/4 cup Ground Flaxseed
3 tbsp Cacoa
1/4 tsp Baking Soda
1/4 tsp Sea Salt
Step 2
3 tbsp Coconut Oil melted and cooled
25g dark chocolate
Step 3
1/4 cup Palm Sugar
1/4+1/8 cup Aquafaba (the liquid from a tin of Chickpeas)
Step 4
Barebells Vegan Salty Peanut Bar chopped into small pieces
25g Vegan Dark Chocolate (optional)
A few spoonfuls of smooth peanut butter
Methods
Preheat your oven 180 degrees c and line a 2lb loaf pan with non stick parchment paper.
Add all the step 1 ingredients into a blender and blend until combined and the oats have become a flour. Alternatively if you have oat flour, you can mix all of the step 1 ingredients by hand in a medium bowl.
Gently melt together the coconut oil and dark chocolate, constantly mixing. Remove from heat and leave to cool slightly.
In your large mixing bowl. Whisk the aquafaba and palm sugar on a medium high speed until you have soft bordering on stiff peaks. Like you would for a meringue.
Slowly pour in the melted coconut oil and chocolate mixture whisking at the same time until combined.
Fold your dry ingredients into the chocolate aquafaba meringue.
Add your Barebells Salty Peanut pieces. Fold these into the mixture. You can add in some more chocolate chunks or nuts if you would like here.
Pour/spoon your brownie batter into the prepared loaf tin. Smooth out the top.
Put a few small dollops of smooth peanut butter on top of the brownie mixture. Take a skewer or knife and run it through the peanut butter and brownie mix to make some swirls. Avoid over swirling/mixing.
Bake for approximately 15 minutes, until a skewer comes out clean when inserted into the middle.
Cool completely before cutting (that is, if you can resist)

Notes
If you haven’t used Aquafaba before or have never heard of it, you may think I am mad! But it is an incredible replacement for egg white in vegan baking. Just give it a go and see!
