Healthier Festive Muffins

Gluten free, no added refined sugar and a little added protein boost from Barebells Vanilla Milkshake.

Ingredients
Wet
1 Medium Banana
1 Egg
2 Medjool Dates
2 tbsp Nut Butter or Tahini
1 tbsp Coconut Oil
1 tbsp Molasses
2tbsp Barebells Vanilla Milkshake
Dry
1/4 cup Oats flour
1/2 cup Almond Flour
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp nutmeg
Pinch ground cloves (optional)
1 tsp Baking Powder
1/4 tsp Salt
Add ins
1/2 cup dried fruit, a mix of raisins and sultanas works nicely, can also soak these in orange juice or even brandy if you feel like it!
Healthier marzipan
1/2 cup almond flour (plus a little extra in case)
2 tsp honey
1 tsp lemon juice
Topping (optional)
Handful of pecans
Method
Preheat your oven 180 degrees C and line a muffin pan with muffin papers. This recipe should make 4 medium/large muffins.
Add all of the wer ingredients into a blender and blend until combined.
Add all of the dry ingredients into a large mixing bowl and whisk to combine.
Pour the wet ingredients into the mixing bowl and whisk with the dry ingredients until you have a smooth even batter.
Fold in your dried fruit.
Spoon the mixture into the muffin cases. Filling the cases until 1/2cm from the top of the case.
Bake for approximately 18-22 minutes. Turning them around in the oven half way through, until a skewer comes out clean.
Leave to cool in the muffin tin.
Whilst your muffins are baking, make the healthier marzipan. Put the ground almonds in a small mixing bowl.
Gently heat the honey in a small saucepan until it is very runny.
Pour the honey into the ground almond, add the lemon juice and mix until you have a smooth dough. You might need a sprinkle or two more ground almonds if the dough is too sticky and wet.
Roll the marzipan in a ball, cover with cling film and place in the fridge.
When the muffins are cool, take the marzipan out the fridge, divide into equal balls and roll into discs the same diameter as the top of the muffins. Top the muffins with the marzipan discs, you can use a little honey or apricot jam or marmalade to help it stick.
If desired you can then blow torch the tops of the marzipan for effect. Top with a pecan for decoration.
