Vanilla, Banana and Blueberry Baked Oatmeal

Gluten-free, lactose free and no added sugar
My favourite breakfast at the moment and with a little added touch from Barebells to get a little more protein in after a morning run or workout.

Ingredients
Dry
1/2 cup Rolled or Steel Cut Oats
1/2 tsp Cinnamon
1/2 tsp Baking Powder
1/4 tsp Sea Salt
Wet
1 Egg
1/2 cup Barebells Vanilla Milkshake
Fruit
1/2 Banana mashed
1 handful blueberries (I usually cut mine in half to help release the juices)
Crunchy Layer
1 tsp Honey
1 tsp Coconut Oil
1/4 cup Mixed Seeds or Chopped Nuts and or Rolled Oats
Method
Preheat your oven 180 degrees C and get yourself a small oven proof bowl or pie dish.
Make the crunchy layer first. In a small bowl, mix together the honey and the coconut oil until combined.
Add in your mixed seeds/chopped nuts/rolled oats (or a mixture of all 3) and mix until combined. Place this in the fridge to harden a little.
Combine all the dry ingredients in a medium bowl.
In a separate bowl whisk the egg and the 1/2 cup Barebells Vanilla Milkshake until combined. Add the mashed banana and blueberries to this wet mixture.
Mix the dry and the wet ingredients together and then pour into your oven proof bowl or pie dish.
Take your crunchy layer out of the fridge, it will have hardened a little, break it up with a spoon and then sprinkle evenly across the top of the banana oats mixture.
You can add additional slices of banana or blueberry on top as well if you wish.
Bake for 15-20 minutes until golden brown and crispy on top.
Notes
I usually prepare the crunchy layer and the oats and banana mixture the night before I want to have it for breakfast. So in the morning all I need to do is sprinkle the crunchy layer on top of the oats and bake.
For the crunchy layer, I usually use a mixture of half rolled oats and half mixed seeds.
If you don't have honey, any other liquid natural sweetener can be used, such as maple syrup.
Cinnamon is optional, but it adds a nice little extra flavour.
