Ricotta and Marmalade one-bowl quick cake

Adapted from an Italian recipe, I must admit I have forgotten where from. Apart from melting a little butter, chuck everything in a bowl, mix it together, pour into a cake tin and bake.

 
 

Ingredients

200g Plain Flour

10g Baking Powder

250g Rricotta

50g Milk

100g marmalade

2 Eggs

130g Sugar

80g melted and cooled butter

Flaked almonds (optional for topping)


Method

  1. Preheat 180 and line 2lb loaf or circular cake tin with parchment paper.

  2. Melt the butter and leave to cool slightly.

  3. Add all other ingredients to a large mixing bowl, add in the melted butter and mix everything together.

  4. Pour into tin (if using, sprinkle flaked almonds on top) and bake for approximately 45 mins until golden brown and skewer comes out clean.

  5. Allow to cool completely before removing from tin and slicing.
