Healthier Coconut Bounty Bars

Gluten free, refined sugar free, dairy free and packed with natural sources of energy.

 

Ingredients


Dry

1/4 cup Ground Almonds

3/4 cup Desiccated Coconut

1 pinch Salt


Wet

1 Egg White

2 tbsp Honey (or other natural sweetener)


Topping

50 grams Dark Chocolate (I use an 85% dark)

 

Method


  1. Line a 1lb loaf tin with non stick baking paper and pre-heat the oven to 160˚C (this is a little lower than normal).

  2. Whisk the egg whites and honey vigorously for a couple of minutes, until soft peaks have formed (like meringues!).

  3. Mix the dry ingredients in a separate bowl and carefully fold into the egg mixture.

  4. Carefully pour or spoon the mixture into your lined loaf tin.

  5. Bake for approximately 15 mins, rotating half way through, or until golden brown.

  6. Cool on cooling rack, but do not remove from the loaf tin.

  7. Melt the chocolate and pour over the top. Allow the chocolate to set before slicing.

 

Notes


Ground Almonds and Almond Flour are practically the same thing, Almond Flour tends to be a little finer in texture. Both will work for most recipes, the flour will just be a little more absorbent. If you can’t find either, you can also grind up flaked almonds until you have the texture of ground almonds.


Any natural sweetener can be used here, such as maple syrup or agave, honey is just my preference.


Dark chocolate again is my preference and the healthier option over a milkier one. But you do you.
