Coffee Bircher Muesli

For when your coffee needs coffee

Ingredients
Step 1
1/2 cup Oats (rolled or steel cut)
Handful of raisins
1/8 cup Desiccated Coconut
1/2 tsp Ground Cinnamon
1/2 Small Apple or 1/4 Large Apple Grated
1 tsp Ground Flaxseed (optional)
Step 2
1/4 cup Cold Coffee
1/4 cup Plant Milk + plus a little extra if needed
2 tsp Plant Yoghurt or Greek Yoghurt
Suggested Toppings
More Desiccated Coconut
Walnuts or other nuts
Medjool Dates or other dried fruit
Nut Butter
Honey or other natural liquid sweetener such as Maple Syrup
Banana
Coffee beans
Dark Chocolate
Method
Combine all of the step 1 ingredients in a small/medium bowl.
Add the step 2 wet ingredients to your oats and apple step 1 ingredients and mix thoroughly.
Place in the fridge overnight or for at least an hour.
Remove from the fridge and give it a stir, you may need to add a little more milk or yoghurt to loosen to your desired consistency.
Leave in the bowl you mixed in, or transfer to clean bowl purely for aesthetic purposes.
Add your desired toppings.
Enjoy!
Notes
I used a coarse cheese grater to grate the apple. This will release some juice, you can include or exclude the juice, the juice will add an extra little bit of sweetness.
Regular cows milk can be used in place of plant milk.
Plant yoghurt or cows milk yoghurt can be used. I tend to stick to plant or a good Greek Yoghurt, as I am allergic to lactose, but if the yoghurt is properly cultured then I can handle it, and greek yoghurt is just too good to miss out on.
I add the ground Flaxseed for the Omega 3, but it will also thicken the consistence of the bircher.
I usually always prepare my breakfast the night before and leave it overnight, but an hour or two in the fridge should do the job. Depending on what consistency you like your bircher, you can add more milk or yoghurt after you've given it a stir after its been in the fridge.
