Banana and Blueberry Baked Oatmeal

Like eating cake for breakfast!
Gluten free, refined sugar free and dairy free. Packed with natural sources of energy and protein.

Ingredients:
Dry
1/2 cup Rolled or Steel Cut Oats
1/2 tsp Cinnamon
1/2 tsp Baking Powder
1/4 tsp Vanilla (optional)
1/4 tsp Sea Salt
1/2 unit Mashed Banana
1 handful Blueberries
Wet
1 unit Egg
1/2 cup Plant Milk
Crunchy Layer
1 tsp Honey
1 tsp Coconut Oil
1/4 cup Mixed Seeds or Chopped Nuts and or a mix of rolled Oats
Method:
Preheat 180˚C and get yourself an oven proof bowl.
Combine all the dry ingredients in a large mixing bowl, adding in the mashed banana and blueberries in at the end.
Combine all the wet ingredients in a large mixing bowl.
Add the dry ingredients into wet ingredients and mix to combine.
Spread into the oven proof bowl.
For the crunchy layer, mix together the honey and the coconut layer. Add in the nuts and seeds and combine.
Sprinkle across the top of the oat mixture. Top with more blueberries and sliced banana if desired.
Bake for 20mins until golden and crispy on top.
Notes
For those with gluten intolerances or allergies make sure your oats are gluten free (prepared in a gluten free environment).
For regular cow milk drinkers, any milk can be used here, it doesn't have to be a plant milk.
