Apple and Coconut Bircher Muesli

Gluten free, refined sugar free and dairy free (if you use plant based yoghurts and milks)


Traditionally made with apple, yet through curiosity and experimentation, apples are just a start! Bircher Muesli works great with other fruit too, so far I've tried pears and persimmons! Watch this space for further bircher adventures.


 

Ingredients


Step 1

1/2 Apple grated

1/4 + 1/8 cup Rolled Oats

1/8 cup Desiccated Coconut

1 handful of raisins


Step 2

1/2 cup plant milk (preferably coconut milk)

1 tbsp greek yoghurt or plant yoghurt


 

Method


  1. Combine all of the step 1 ingredients together.

  2. Add the plant milk and yoghurt to the step 1 ingredients and mix thoroughly.

  3. Leave in the fridge overnight.

  4. Add any more milk or yoghurt as desired before eating.

  5. Add toppings as desired. I tend to like to add extra fruit, a bit of crunch in the form of seeds or nuts, always a good dollop of peanut butter and a drizzle of honey.
